Headline: Girl from Orange County makes Orange Dessert

I haven't shared a recipe in a while. Well, this weekend I'm sharing a yummy recipe tutorial for Orange Margarita Squares on Cindy's blog, Retro Revival. It's a fun alternative to all the pumpkin desserts this Fall.

Burrito Soup

I had the yummiest soup at a place called Barbacoa in Salt Lake City. Apparently there are several Barbacoas in Utah. Delish. You must go. Anyways, it's one of those places where all the ingredients are lined up and the nice people behind the counter add whatever you want to make whatever you want. The day I went the guy thought it would be funny to ask me everything in Spanish. So, it was also an educational experience. 

Anywho, I had a wonderful burrito soup. Since there are no Barbacoas in California (boo hiss!), I decided to make my own and share the recipe with you (hurray!).
Burrito Soup
You'll need:
1 Quart of vegetable broth
1 Can of white hominy (it's a corn product) 
Bell peppers and onion (I used 1 green, 1/2 red, 1/2 yellow and 1/4 onion)
2 cans of beans, rinsed and drained (Barbacoa lets you choose between black or pinto)
Sour cream, 1 cup shredded cheese and 4 corn tortillas (or use tortilla chips, crushed)
2 cups Cooked rice (I use brown but it's a free country, use white if that's what you're into.)

Let's do it!
First, heat up the broth and hominy in a 2 quart pot. Set aside.
Slice the peppers and onions, fajita style.
Saute in olive oil until the onions are golden brown. Place mixture in serving bowl.
Slice tortillas into 1 inch squares (nevermind this if you are using chips.)
Fry in a pan with some canola oil until crisp.
Drain on paper towels and sprinkle with salt.

Everyone gets to serve themselves for this one. 
Here's the order:
1. Rice
2. Peppers and onions
3. Beans
(at Barbacoa you also have the choice of shredded chicken, beef, or pork at this point. Hello leftovers!)
4. Broth (don't forget to scoop the hominy from the bottom.)
Finish it off with:
5. Cheese
6. Chips
7. Sour cream

Kitchen Sink Cookies

These are my new favorite cookies. There is something for everyone. There are a lot of ingredients and that's why I'm calling them kitchen sink cookies. They are just about fool-proof. If your cookies tend to fall flat, try these. They are hard to screw up.

Kitchen Sink Cookies
Ingredient List
1/2 cup unsalted butter
½ cup vegetable shortening
1 cups packed light brown sugar (or sugar in the raw)
2/3 cup sugar
2 large eggs
2 ½ teaspoons vanilla extract
2 cups all purpose white flour

¾ teaspoon baking powder
¾ teaspoon baking soda
generous ½ teaspoon salt
2 cups old fashioned rolled oats

2 cups corn flakes, crushed
1 ¼ cups (5 oz.) chopped pecans
1 ¼ cups (about 3 ½ oz.) shredded or flaked sweetened coconut
Optional:
*1 tablespoon peanut butter
**2 cups Chocolate chips

The instructions, with pictures
preheat oven to 375 degrees
In a mixer or a large bowl, cream the butter, shortening and brown and white sugars until light in color.
Add the eggs and vanilla and mix until fluffy.
In a medium bowl combine the flour, baking powder, baking soda and salt.
Add flour mixture to butter mixture and mix until combined. Stir in the pecans, corn flakes, coconut and oats.
This is a good time to add chocolate chips. You can add peanut butter here  too.
Let the dough stand for 5 to 10 minutes, or until firmed up slightly.
Use an ice cream scoop and place balls about 2 inces apart on silpat or greased cookie sheet.
Use your hand to pat down the balls until about 1/2 to one inch thick.
Bake for 12-15 minutes. The sides will be a light brown and the center will look slightly underdone. Set the cookie sheet onto a wire rack and let stand until the cookies firm up slightly, about 3-5 minutes (this is super important so they don't break apart!). Transfer cookies with a spatula to wire racks. Let stand until completely cooled.
Makes 24-30 3 inch cookies. Store in an airtight containes for up to 1 week or freeze for up to one month.

Little note: you can make them larger or smaller, just adjust the cooking time. :)

Apple Pear Sauce Tutorial

This year we made sweet potato latkes with apple pear sauce and sour cream. I thought you might enjoy making your own apple pear sauce. It's really easy and yummy.

Apple Pear Sauce
2 apples
3 pounds of pears
2 Tbs. juice (apple, cranberry, lemon, or grape)

Peel, core and chop apples into 1 inch pieces. Cut off each end of pear. Cut in half and using a melon baller or spoon, scrape out the vein and seeds. Leave the peel on the pears.
Your pile should look like this with peel-on pear halves and peeled and chopped apples.
Now, place your fruit in a medium saucepan with the juice. The pears are mostly water so you don't need any more than 2 Tbs. of juice. It's really just in there to get you started.

Cover and cook on the lowest setting on your stove.
After about 20-25 minutes, lift the lid and check your fruit. You should be able to chop the pears in half with a wooden spoon and there should be a lot of liquid at the bottom of the pan. Cook for another 15-20 minutes on low or increase the heat to medium and cook another 10-15 minutes but you'll need to watch it closely.

When the pears easily break apart with a wooden spoon, turn off the heat and let the mixture cool for a few minutes. It should look like this:
Using an imersion blender, blender, food mill or food processor blend the mixtures until it is smooth. The pear peel will disappear. Serve cold or at room temperature. Store in the fridge in an airtight container. Enjoy!

Blue Ribbon Granola

This year I was honored to win a blue ribbon for my granola at the OC Fair. I've had several requests for my "winning recipe" so here is my attempt to share it with you. I make granola for my family once a week and it is different every time I make it. The award winner was Orange Cherry Pecan.

First up:
Orange Dried Cherries (They are good on their own but are a wonderful addition to granola.)

*Preheat oven to 200 degrees.

2- 10 oz. bags of frozen cherries
1/2 to 1 cup (enough to cover the cherries) Orange juice (I used orange mango)
1/4 cup honey
secret ingredient-a little orange zest

In a medium saucepan on medium heat, bring all ingredients to a boil. Turn heat to low and allow mixture to simmer until most of the liquid has evaporated and the juice is thick. Don't stir. If you really want to stir it, just swirl the pot around. Remove from heat. Using a slotted spoon, remove cherries and place them in a single layer on a silicone pad lined cookie sheet (or parchment paper or non-stick cookie sheet.) Dry in preheated oven
for about 2 hours, checking every 20-30 minutes. You want them to be chewy. If you have a dehydrator, cool. Use it.

Orange Cherry Pecan Granola
* Preheat oven to 275 degrees
4 cups grains (I use a mixture of oatmeal, wheat flakes, barley flakes, and rye flakes)
2 cups nuts (the winning recipe used blanched almonds and pecans)
1/2 cup flax seeds
1/2-3/4 cups honey (depending on how sweet you want it)
1/2 cup extra virgin olive oil
sprinklings of sea salt, cinnamon, and nutmeg
secret ingredient-2 Tbs. orange juice
Orange zest
Orange Dried Cherries
Combine all ingredients except zest and cherries in a medium-sized bowl. Spread mixture onto a non-stick or foil-lined cookie sheet. Bake in oven for 30 minutes to an hour. Stir every 10-15 minutes after 30 minutes. You want the granola a golden brown. You are stirring so the sides don't get too brown. Remove granola from the oven and sprinkle with orange zest. Allow granola to cool before adding dried cherries and packaging.

It's great on yogurt or with milk as a cereal. Other flavoring options: add a teaspoon of vanilla, pumpkin pie spice, coconut or almond extract. You could also add peanut butter and replace the honey with maple syrup or agave necter.
Other fruits: dehydrated or freeze-dried strawberries, peaches, raisins, currents, flaked coconut, blueberries, apples, banana chips, etc.
Other nuts and seeds: slivered almonds (just be careful that they don't get too brown too quickly), peanuts, walnuts, pumpkin seeds (they are in the picture above but I didn't use them in my award winning recipe), sunflower seeds, hazelnuts, macadamia nuts, etc.
